Easy peanut butter banana breakfast cookies perfect for your busy mornings!
Hi friends, happy Monday. I can’t say that I’m thrilled that the weekend is over but I’m trying to find a more positive mindset going into the week. Lately, I’ve been getting the Sunday scaries like no other. After around 3pm on Sunday, I start immediately thinking about all the work I have to do the next week, how much I wish I could just sit around home.
It really isn’t a great mindset to have so I’ve told myself I need to stop that, and I’m giving it a try by trying to live out my Sundays. The weekend doesn’t stop Sunday morning, so it is my goal to fill my Sundays with fun things to do to keep myself occupied.
A few weekends ago, I decided to do some baking to fill some of my afternoon up. I had a couple of ripe bananas because I normally try to buy a couple more just in case I have the itch to bake (which happens fairly often). Trying to challenge myself to not make banana bread or banana muffins, even though they are my favorite, I started googling some different recipes and eventually decided to create my own after being inspired.
Alas, the peanut butter banana breakfast cookies were born.
They turned out so well so I knew I needed to share the recipe with all of you. They are definitely more of a breakfast cookie (less sweet, more filling) and would work perfectly with that morning cup of coffee. My family has been enjoying them at all times of the day, so they are a good sweet treat for really whenever your sweet tooth calls.
After photographing them, I realized that they really are much better when drizzled with peanut butter and topped with sea salt. But I’m also obsessed with topping every single sweet treat with salt recently. Maybe this means something like I’m sodium deficient? I don’t know but I have been putting it on my desserts every night.
Next time you have some ripe bananas and aren’t in the mood for a banana bread themed goody, give these breakfast cookies a shot.
- 1 banana, mashed
- 2 Tbsp. peanut butter
- ½ tsp. vanilla
- ⅓ cup coconut flour
- 1 Tbsp. coconut sugar
- Sea salt
- Preheat oven to 350F
- In a bowl, mix mashed banana, peanut butter, and vanilla thoroughly
- Add coconut flour and coconut sugar
- It will form into a dough
- Roll into 2 Tbsp. size balls and flatten with fork
- Bake for 13-15 minutes.
- Top with sea salt + peanut butter.
- Store in refrigerator to keep fresh.
