Hellllllo everyone! Happy Monday all. How was your weekend? Mine was pretty awesome and the weather was pretty great too. I spent so much time outside, between outdoor festivals and my boyfriend’s work’s “Family Day”, I got to soak up the sunshine!
Jumping right into it this morning with an incredibly healthy recipe for lemon poppy seed pancakes. Yes, lemon poppy seed PANCAKES. Holy smokes, these babies were delicious and they seriously scream spring.

- 1 cup almond flour
- 2 tbsp arrowroot starch/flour or tapioca flour
- 1 scoop Further Food collagen
- ¼ teaspoon salt
- ¼ cup water
- 2 tbsp maple syrup
- 2 eggs, beaten
- 1 tsp. vanilla
- Juice of 1 lemon
- Zest of 1 lemon
- 2 tbsp. poppy seeds
- Combine flours, collagen, salt in large bowl.
- In small bowl combine water, maple syrup, eggs, and vanilla.
- Add wet ingredients to dry ingredients.
- Add in juice and zest of one lemon, then add the poppy seeds.
- Stir to combine.
- Heat pan to low temperature and cook pancakes SLOWLY. They will take longer than regular pancakes.
