Maca Coconut Energy Balls
Hi everyone, happy Monday! Time is seriously flying and I just can’t figure out a way to slow it down. Soon enough were going to be wearing winter coats, apple picking, and starting to sing Christmas music…
Okay, maybe not quite yet but I am definitely getting very excited for all of the fall-flavored treats to be coming soon. Give me all of the pumpkin bread and apple cider!
Anyway, while were still on a summer kick and enjoying all the coconutty things, I wanted to create a new energy ball recipe to have for the week. I’ve really tried to challenge myself and stay away from only making my go-to peanut butter protein balls because they truly are my favorite version ever, but now that I’ve got a food processor and have started to acquire more fun ingredients, I’m trying to make new varieties.
These balls were completely made by a little bit of trial and error, but the final product turned out amazing.
I’ve seen a lot of energy balls on the internet that have a mile long list of ingredients and while I’m sure they taste really good, I try to keep my ingredient list fairly short. These babies only have a few ingredients:
- peanut butter
- maca powder (optional)
Combine 1.5 cup dates, 1/2 cup peanut butter, 1 cup oats, 1 cup walnuts, 1/2 cup coconut, tsp each of cinnamon + salt, and 1 Tbsp of maca powder in a food processor. Process until combined, it may seem dry at first but the oils from the coconut and walnuts will break down, so have some patience. Once you can form into balls and they stick together, they are ready. Roll into balls and store in fridge or freeze (freezer for me!)
