    Things I’m Loving Friday

    Is it just me or is time literally flying? I’m not even sure if its a bad or good thing, but holy cow,  how are we almost done April?! Despite my disbelief, it is already Friday again and I am so excited about it. This weekend is the long awaited GOOD Fest in Philadelphia and I couldn’t be more excited about it. Tons of my favorite bloggers and wellness gurus are getting together for a day filled with amazing activities, eats and relationship building. I really can’t wait to spend time with people who share similar passions as me – and my best friend, Sylvia, will be joining along as well!

I have been cooking and baking all.the.things. lately and I absolutely love it. With making all of these delicious eats, I need test bunnies to make sure that I’m not being biased towards my own food. I’ve had to get creative in this department – who will give me an honest opinion on what I’ve made, or if its something that I’ve already decided is delicious, who can I pawn some food off onto?     Things I’m Loving Friday #2

    Happy Friday, friends!! I am so excited the weekend is here (when am I not?) but this weekend should be extra special because it is Easter! Extra time with family & friends, plus delicious food = happy Erin. Tonight will involve some celebrating (still milking this new job thing) by going out for drinks and dinner with my boyfriend, and hopefully sitting outside because this weather is amazing. I am also starting to hunt for apartments in the city with my best friend (hi Chels!) because we are ready to make the move. Then on Sunday, I will be heading to my aunt’s house for Easter brunch.     Deliciously Dreamy Vegan Falafel

    Ever since I discovered hummus several years ago, I’ve never looked back. I’m actually surprised I haven’t turned into a chickpea by now because there is rarely a day that goes by that I don’t have it in some form. If you know me, you know I love hummus. You would know that there IS going to be a hummus bar at my wedding despite how whoever I marry feels about it. Ha!

    I don’t discriminate either – regular, lemon, garlic, beet, homemade, store bought, DIZENGOFF – just make it extra creamy and give me some pita and carrots and I am one happy girl. I just love the stuff.

    Tacos, Tequila, & Green Juice

    Hi friends! Happy Monday! While I wasn’t originally planning on recapping my weekends, something was telling me that it would be fun for others to take a peek into what a weekend in my shoes looks like. I always love creeping into other people’s lives so why not share what I was up to.

    I don’t have much to share from Friday except that after work, my parents and I celebrated my new job! (more on that later!) We hung around, had happy hour & grabbed some delicious food. It was a fun way to spend time together and celebrate.

    Saturday morning started early with a 7:30 a.m. run with my dad. We went on our usual four miles that takes us back through some of the most beautiful country roads in the suburbs. I didn’t take any pictures during the run (blogger fail) but the weather was perfect: 50s and sunny.

    I made a smoothie bowl when I got home before heading on the road to the city for my girls weekend. It was seriously the most beautiful purple color and the picture does not do it justice. It was made with blueberries, strawberries, vega protein powder, hemp seeds, chia seeds, peanut butter and almond milk. Topped with coconut flakes, more hemp seeds, and a pb drizzle cause #AllThePeanutButter.

    I headed down to my friend’s house in the city and we went to the mall for some shopping. I got a bunch of new things and full embraced treating myself because of said new job. I may have bought quite a few things from Lululemon, but hey, gotta celebrate! I also bought bell-bottomed jeans that I am so excited to wear – my mom was laughing and couldn’t believe that they have made their way back in style.

    We headed to Honeygrow for lunch and when we walked in, it was this location’s second birthday. They had this fun wheel to spin where you could get free sides, free drinks, even free salads. Well, both my friend and I won free salads! Nice! Rightfully so, I packed mine full and got my (free) money’s worth. Their spicy tofu is literally to die for.

    We came home, popped a bottle of champagne to further celebrate my new job, and just hung around having girl time. It was so great. We listened to music and got ready and then headed out to Mission Taqueria . We each got spicy margaritas,  shared a few apps (guac of course) and then got tacos. I got the shrimp tacos and they were amazing. It was a day of good eats for sure!

    Yesterday morning we hit up an early barre3 class in Rittenhouse to support one of my friends as she completes her barre3 instructor training! It was a great class and oh my gosh, the space is beautiful! It is a brand new location that is absolutely gorgeous. They offer so many amenities and you can tell that they really work hard to make it feel welcoming! I definitely will be back.

    A brand new Sip-N-Glo Juicery opened right around the corner, so we headed there for smoothies and juices after. I just got a juice because I was headed to my aunt’s bridal shower brunch.

    After the bridal shower I stopped at Whole Foods and then spent some time outside because it was absolutely gorgeous out – 68 degrees and sunny is speaking my language. It made me so excited for the summer time. I hope everyone had a nice weekend and I can’t wait to share so more fun stuff this week.

    Things I’m Loving Friday #1

    Hi friends! Happy Friday! I made it through my first blogging week and I am so excited about that. Even more excited about the fact that it is finalllllly Friday.  This weekend I’ll be spending some time in the city with my girlfriends – shopping, going out for dinner + drinks and taking a barre class on Sunday. It’s going to satisfy some much needed girl time.

    So welcome to my first take on a Friday Favorites post. I’m planning on sharing favorite things in my life each week with you all on Fridays. Things is a vague term so I guess we will see what types of things are favorites each week. I’m thinking favorite eats, favorite blogs or podcasts I’ve discovered, favorite outfits, favorite products I’m using, really anything that I’m loving. We will see how it goes!

    Peanut Butter Chocolate Chip Vegan Cookies

    Mmmmmm friends. Let me tell you that I knew this needed to be my first recipe the minute I laid my mouth on these cookies. Holy delicious. These super soft grain-free cookies are by far the best thing I’ve whipped up in my kitchen lately.

    They taste so similar to peanut butter blossoms, you know the ones with the Hershey kiss in the middle that I loved so much as a little girl. They were always my favorite cookie around the holidays and let’s be real, anytime there is peanut butter & chocolate together, it’s a favorite for me.
