Things I’m Loving Friday #10
Hello Friday. You’ve come around quite quickly this week and I definitely am not mad about it. Tom and I spent the past weekend in Boston and then in Connecticut to celebrate his birthday and the Fourth of July (which are on the same day).
Life has been super busy lately and I haven’t gotten around to doing a Things I’m Loving Friday post in a while, but I honestly love sharing what has been awesome in my life lately. I seem to hear the most feedback when it comes to these posts so I’ll take that as a sign to keep them coming!
This edition is going to be themed around things I’m loving over the past few days because we did, ate, drank, and saw A LOT while away.
- My easy 4 ingredient peanut butter cookies
I brought a bunch of these with us on the ride up to Boston as a road trip snack because no road trip is complete with snacks, am I right? These cookies are so incredibly easy to make and I originally shared the recipe on my Instagram stories (@erinliveswhole). For those of you who didn’t catch the story, I’m sharing the recipe now!
Preheat oven to 350F. Mix together 1 cup natural peanut butter, 1 cup coconut sugar (can use 1/2 white + 1/2 brown if need be), 1 tsp. vanilla, and 1 egg. Roll into balls and place on baking sheet (I line mine with parchment paper). Press down with fork and sprinkle with sea salt. Bake for 9-11 minutes; they may seem doughy but they will cool and be perfectly delicious.

We went up to Boston last Thursday to visit for the weekend because both of our siblings live there. I hadn’t been since I was much younger but we ended up having so much fun.

- Celebrating Tom’s birthday in Connecticut
We ended our trip by celebrating in Tom’s hometown in Connecticut and got to see a lot of his immediate family. It was such a nice time and his mom is one heck of an awesome cook. I always leave weekends in CT feeling refreshed and ready for the week.
I hope you all have the best weekend! We are celebrating Tom’s birthday with a bar crawl in the city with many of his friends and hoping to keep the rest somewhat low-key. What’re you up to this weekend? Have any travel plans for the summer?
