Things I’m Loving Friday
Hi there everyone! How ready for the weekend are you? I know I am. This week was a doozy and moved so slow. I think that is partially because last week was a quick one due to the holiday, but man I’m ready for this weekend. I’ll be hanging at my parents house for the last night tonight before officially moving (and living in) the city. If you follow me on Instagram (Erinliveswhole), I’ll be doing some fun stories over there and giving a tour of my new place.
The one person (she’s basically a person) I’m going to miss the most is definitely my dog. Sorry mom and dad, it was fun while it lasted but it is definitely going to be rough not coming home to that tail-wagging, wet-kiss giving doggy! I’m probably being extra soft right now because she is laying on the couch next to me as I type this…
Anyway, in typical Friday fashion, I’m sharing some of my favorite things that I’m loving this week – please share your favorites in the comments below!
Calm me the succulent queen. Over the past month or so, I have officially become the owner of four succulents. I don’t know what it is about them but I love them so much recently. I feel like they add so much character to a room, plus I’ve been adding them to my desk and I have been loving the new decorations. Maybe it’s because they are really hard to kill and I don’t have the world’s brightest green thumb, but hey, I’ve had a good success rate so far!
- Grilling Out
What is better than being able to use the grill to cook up any protein, veggies, potatoes, kebabs – really anything?! I say this as I’m moving to a house where there isn’t access to a grill, but luckily my boyfriend lives a few blocks away and has one. There is something about the char from the grill that adds an extra layer of flavor to my food. My neighbors had us over the other night for these kebabs and grilled corn. She left the husk on when she grilled it and man, that was some warm, juicy corn. I never want to boil my corn again!
- Easy Fudgy Flourless Chocolate Brownies
If you know anything about me, it is that I HAVE to have a sweet after dinner. 99% of the time I won’t be satisfied unless it is chocolate and after finding a recipe for 4 ingredient chocolate brownies (that actually taste like straight up fudge), I have been making a batch of these brownies almost every week. They don’t photograph the prettiest, but I swear they are so delicious. For the recipe above I added a few more ingredients because I only had two ripe bananas and needed some more sweetness. So I added in some mashed sweet potato! They are slightly less sweet than bananas, but turn out so well in baked goods. Here is the recipe:
- 1/2 cup mashed sweet potato
- 2 medium sized very ripe bananas, mashed (overripe is best)
- 1/2 cup smooth peanut butter
- 1/4 cup maple syrup
- 1/4 cup cocoa powder (I used extra dark cocoa)
- ** Optional: 1 scoop of protein powder (do not use whey, must be plant based or else they will taste chalky, I like to add in 1 scoop of Vega protein powder)
- ** Batter will be thick and should be thicker than any other brownie batter, but if still dry add a few splashes of any milk (almond)
Preheat the oven the 350F. Melt your nut butter in microwave. In a blender, food processor, or by using your hands, blend sweet potato, bananas, peanut butter, maple syrup, cocoa powder and protein powder if using it. Pour the mixture into a greased loaf pan (one you would make banana bread in). Bake for around 18-20 minutes or until cooked through. Remove from the oven and allow to cool completely before slicing into pieces. **Store in refrigerator**
- Finalizing Our Next Trip
At the end of June and for Fourth of July weekend, Tom and I are heading to Boston! Were going to leave on the Thursday before and then spend the next 3 days with our siblings who live there (his brother + sis-in-law and my brother). Our days are pretty open and I only have one necessity and that is going to Pressed Freeze to get their freeze finally. But really, we are hoping to do all things touristy even though we both have been there before.
I suspect it will be a fairly busy weekend in the city figuring its a very historical city and it is Fourth of July weekend, but any suggestions for places we must go?! Things we need to do? Please share!! We have our dinners planned #foodieproblems, but any place we need to eat breakfast or lunch?! Please share!
