Key Ingredients to make Cider Braised Chicken
– Butter: – Yellow onion – Apple – Apple cider – Chicken breasts – Salt & pepper – Chicken broth – Arrowroot powder – Thyme – Parmesan
In a large skillet, melt 2 tbsp of butter and sauté sliced onions, apple slices, and 1/2 cup of apple cider until browned and softened. Pound chicken breasts to an even thickness of about 1 inch, then season with thyme, salt, and pepper. Set aside the cooked onions and add 2 tbsp of butter to the skillet.
Sear the chicken for 5 minutes on each side, then transfer to a plate. In a small bowl, mix 1/2 cup apple cider, 1/2 cup chicken broth, and 1 tbsp arrowroot powder.
Return onions to the skillet, pour in the broth mixture, and whisk until thickened. Turn off the heat. Place the chicken back in the skillet, covering it with onions, apples, and sauce. Add thyme sprigs around the chicken.
Bake in the oven for 8-10 minutes or until the chicken reaches an internal temperature of 165°F. Sprinkle with Parmesan cheese and remove thyme sprigs before serving.
