– Sweet potatoes – Butter – Sugar – Orange juice – Spices – Vanilla – Mini marshmallows
Preheat the oven to 375F and grease a 9×9 or 9×13 dish. Peel and chop sweet potatoes into 1/2 inch rounds, placing them in the dish. In a saucepan, melt butter and add sugars, orange juice, cinnamon, salt, ginger, cloves, and nutmeg.
Bring to a boil, then simmer for 5 minutes until the syrup thickens. Pour the syrup over sweet potatoes, coating them. Cover with foil and bake for 30 minutes, then uncover, baste with syrup, and bake for an additional 50-55 minutes, basting every 15 minutes.
Add marshmallows for the last 10 minutes, and let cool slightly before serving.
