Asian Inspired Turkey Meatballs with Peanut Sauce

It’s so much fun to cook when you have this recipe! Asian-inspired turkey meatballs with peanut sauce are easy to make with a complex taste. You’ll feel like a pro-chef as you chop and saute the ingredients.

Ingredients

Meatballs:

  • 1lb 93/7 ground turkey
  • 1/2 small yellow onion
  • 1 tsp ground ginger
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced

Sauce:

  • 1/2 cup natural peanut butter 
  • 2 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1/2 tsp ground ginger
  • 2 cloves garlic, minced
  • 1/3 cup water

Bowl:

  • 16oz bag frozen cauliflower rice
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 2 carrots, sliced
  • 1 cup diced cucumber
  • 1 cup edamame

Instructions

  1. Preheat oven to 375F and line baking sheet with parchment paper.
  2. In a large bowl, mix together all meatball ingredients. Divide into meatballs, 40g each, and place on baking sheet. You should have around 12-13 meatballs.
  3. Bake for 15 minutes.
  4. While baking, make sauce by whisking together all sauce ingredients. Set aside once combined.
  5. Prepare your bowl by making cauliflower rice according to package. Add lime juice and salt to caulirice.
  6. Divide evenly into three bowls, add 1/3 cup cucumber, 1/3 cup edamame, and 1/3 of the carrots to each bowl.
  7. Once meatballs are done, trim excess fat that spilt out on the side. Place 4 meatballs on top of bowls.
  8. Divide the sauce into three portions and distribute evenly amongst the bowls. Enjoy!
