We’ve officially welcomed and embraced fall over here in Philadelphia. It seems like just overnight the temperatures dropped dramatically and now I’m finding myself writing up this blog post from my couch with a blanket on.
I swear it was literally just summer, or maybe that’s because summer is always on my mind and I’m wishing we could rewind time so I could go back to my favorite season.
I always tell people how much I love living in a town where there are seasons, I mean who wouldn’t want to experience the crisp spring air, with the warm summers, then the cool fall, and snow in winter? It’s fun to live in Philadelphia because we truly get to experience the seasons.
But I’m just a lover of summer and wearing shorts and not having to bundle up. I would be barefoot and in a shorts all year round if that was acceptable (and I wouldn’t be freezing!).
I think the only good thing that comes with winter is the change in temperature of food.
Just like how I prefer my weather warm, I prefer my food even warmer. I’ve always been the girl who isn’t afraid to reheat her oatmeal three times until its pipping hot, her soup until the steam is coming off, and don’t even get me started on my coffee!
I think its the comfort of these foods when they are warm, but that is how I like them best!
Fall brings in so many different types of squash and veggies that I absolutely adore, including delicata squash which I actually haven’t made in so long. It is definitely one of my favorite squashes to make and I love it because you can eat the skin!!
That whole processes of not having to peel it and just being able to cut it up and roast it in the oven literally is the key reason as to why it is one of my favorites.
All you really need for this recipe is one delicata squash, some spices, a little heart healthy oil, and an oven!

- Preheat oven to 425F
- Cut delicata squash into rings.
- Place in mixing bowl and toss with olive oil.
- In a small bowl, combine seasonings and mix.
- Sprinkle over top of squash and toss until completely coated.
- Lay squash flat on parchment lined baking sheet.
- Bake for 25-30 minutes or until completely roasted.
