Easy Italian Pasta Salad Recipe

Enjoy a variety of savory flavors in this Easy Italian Pasta Salad Recipe. It’s made with red onion, salami, mozzarella, pepperoncini, black olives, and a homemade dressing!

Ingredients

Salad:

  • 16oz fusili pasta
  • 1 green pepper, diced
  • 1 pint grape tomatoes, halved
  • 1/2 red onion, diced
  • 8 oz salami, diced small
  • 1 cup mozzarella, cubed
  • 3/4 cup pepperoncini, diced
  • 3/4 cup black olives, diced
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley

Dressing:

  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 2 tbsp dijon mustard
  • 2 tbsp honey
  • 2 tsp italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Cook pasta according to box directions. Set aside.
  2. Chop and prep all veggies.
  3. Prepare salad dressing by whisking together all ingredients in a separate bowl.
  4. In a large bowl, add cooked pasta, pepper, tomatoes, onion, salami, mozzarella, pepperoncini, and olives.
  5. Drizzle dressing over top, then mix until well combined.
  6. Sprinkle with parmesan cheese and parsley, and gently toss.
  7. Serve
