Easy Paleo Sugar Cookies

This easy paleo sugar cookie recipe is perfect for holiday cookie decorating! It’s grain free, gluten free, and dairy free. All you need are two bowls and a few minutes to whip up this cookie dough!¬†

Yield 30 cookies 1x

Ingredients

Icing:

  • 1 cup powdered sugar
  • 12 tbsp water
  • a few drops of food coloring

Instructions

  1.  Preheat oven to 325F
  2. Add almond flour, coconut flour baking soda, salt (all dry ingredients) to a medium bowl
  3. Mix together egg, honey, coconut oil, almond extract, and vanilla extract in a large bowl
  4. Add dry ingredients to wet ingredients and mix to combine
  5. Mix until a ball forms
  6. Wrap in plastic wrap and chill in fridge for 30 minutes to prevent sticking when rolling.
  7. Roll dough about 1/4 to 1/2 inch thick and use cookie cutters to cut
  8. Bake for 6-8 minutes. Watch cookies closely – they burn quickly!
  9. If decorating, allow cookies to cool completely

Icing (for decorating)

  1. Add powdered sugar, water, and food coloring together. Mix to combine
  2. Put in ziplock bag and cut corner to allow for easy decorating

Notes

Number of cookies will depend on the size of your cookie cutters
