Sweet Potato Pancakes

  • 1 medium-sized cooked sweet potato, mashed without skin
  • 3 eggs
  • 1/3 cup peanut butter (any nut butter would work)
  • 1 tsp. vanilla
  • 1/4 cup almond milk
  • 1 tbsp. coconut flour


  1. In a large bowl, mix together mashed sweet potato, eggs, peanut butter, vanilla, and almond milk
  2. Add in coconut flour
  3. Heat pan to medium and spray with non-stick spray (I use coconut oil spray)
  4. Drop ½ cup batter onto skillet, flip when golden on underside
  5. Repeat until batter is finished
