Ingredients
- 2 cups white whole wheat flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup softened coconut oil
- 3/4 cup coconut sugar
- 3 eggs
- 1 tsp vanilla
- 1/2 tsp almond extract
- 1 cup chocolate chips
- 1 tsp coconut oil
Instructions
- Preheat oven to 350F and line baking sheet with parchment paper.
- In a medium bowl, mix together flour, baking powder and salt.
- In a large bowl, cream together oil, coconut sugar, eggs, vanilla, and almond extract.
- Add dry ingredients to wet and stir until all combined.
- Cut dough in half and form/flatten into two logs, approximately 4 inches by 8 inches. They will look like flatter loaves of bread. If it is sticky, coat your hands in flour to work with it or use a spatula! Space them far enough apart because they will spread in oven.
- Bake for 25 minutes. Then let cool for 10 minutes before slicing into pieces.
- Turn slices to lay flat and bake for another 10 minutes.
- Let cool and harden, and while cooling, melt chocolate chips with oil in 30 second increments. Then dip bottom of biscotti in melted chocolate.
