Healthy Biscotti Recipe

  1. Preheat oven to 350F and line baking sheet with parchment paper.
  2. In a medium bowl, mix together flour, baking powder and salt.
  3. In a large bowl, cream together oil, coconut sugar, eggs, vanilla, and almond extract.
  4. Add dry ingredients to wet and stir until all combined.
  5. Cut dough in half and form/flatten into two logs, approximately 4 inches by 8 inches. They will look like flatter loaves of bread. If it is sticky, coat your hands in flour to work with it or use a spatula! Space them far enough apart because they will spread in oven.
  6. Bake for 25 minutes. Then let cool for 10 minutes before slicing into pieces.
  7. Turn slices to lay flat and bake for another 10 minutes.
  8. Let cool and harden, and while cooling, melt chocolate chips with oil in 30 second increments. Then dip bottom of biscotti in melted chocolate.
