Ingredients
- 1 2/3 cups all purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 1/3 cup mashed ripe bananas (about 3 large bananas)
- 1/4 cup white miso paste
- 2 eggs, whisked
- 1/2 cup melted coconut oil or other neutral oil
- 1/2 cup maple syrup
- 1 tsp. vanilla extract
Miso Maple Glaze
- 1 cup powdered sugar
- 2 tbsp maple syrup
- 1/2 tbsp white miso paste
Instructions
- Preheat oven to 350F and prepare 9×5 loaf pan.
- In a small bowl, mix together flour, baking soda, salt and cinnamon. Set aside.
- In a large bowl, whisk mashed bananas, miso paste, and eggs until combined.
- Mix in oil, maple syrup, and vanilla.
- Add dry ingredients to wet and stir to combine.
- Pour into greased bread loaf pan.
- Bake for 40-45 minutes or until toothpick comes out clean.
- While cooling, whisk together glaze ingredients. Pour over cooled loaf. Slice and enjoy!
