Shaved Brussels Sprout Salad

Get ready to enjoy, cold, refreshing, and even fruity flavors in this Shaved Brussels Sprout Salad! It works great as a side but can stand alone as a main course!

Ingredients

  • 1lb shaved brussels sprouts
  • 1 large honeycrisp apple, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup pine nuts (optionally toasted – in a pan for 3-4 min over high heat)
  • 1/2 cup shredded parm

Dressing:

  • 3 tbsp dijon mustard
  • 3 tbsp honey
  • 3 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. In a large bowl, add shaved brussels sprouts, chopped apples, dried cranberries, pine nuts, and shredded parm.
  2. In a small bowl, whisk together all of the dressing ingredients. Pour overtop of salad and mix until well combined and evenly coated.
  3. Let stand ten minutes before serving.
