– Ground turkey – Yellow onion – Ground ginger – Sesame oil – Soy sauce – Garlic – Powdered peanut butter – Rice wine vinegar – Honey – Lime juice – Water – Frozen cauliflower rice – Carrots – Cucumber – Edamame
In a large bowl, mix together all meatball ingredients. Divide into meatballs place on baking sheet. Bake for 15 minutes.
While baking, make sauce by whisking together all sauce ingredients. Set aside once combined.
Prepare bowls by making cauliflower rice. Add lime juice and salt. Divide evenly into three bowls Add cucumber, edamame, and carrots to each bowl. Place 4 meatballs on top of bowls.
Divide sauce and enjoy!
