Add onion, garlic, ginger, and ground chicken to a large sauce pan and cook until mostly cooked, then add sauce.
Add sesame oil, sriracha, rice vinegar, soy sauce, and hoisin sauce to chicken, reduce heat, and stir in green onion and water chestnuts.
Add 1/3 cup chicken mixture to butter lettuce leaves and add toppings.
