Mix beef, sausage, breadcrumbs, parmesan, egg, parsley, garlic powder, and salt in a bowl; roll into mini meatballs. Cook meatballs in olive oil in a saucepan for 5-6 minutes. In a dutch oven, sauté onion, carrots, and celery in oil.
