Key Ingredients to make Lemon Blueberry Loaf
Butter Sugar Eggs Vanilla Lemon zest Almond mik Blueberries Powdered sugar
In a large bowl, beat together butter, sugar, eggs, and vanilla. Add in lemon zest and lemon juice and beat until creamy.
Mix flour, baking powder, salt, and almond milk in a bowl. Add to wet mixture, beat until creamy. Pour into greased loaf pan. Bake for 50-55 minutes.
Make the glaze by heating blueberries and water, pressing down on skins, and mixing with powdered sugar and almond milk until desired consistency is reached.
Once cake has totally cooled, frost with glaze.
