To make sautéed pears, wash and slice them into ½ inch thick pieces. Heat 1 tsp of butter in a sauté pan, add pear slices, sprinkle with cinnamon, and stir to coat them evenly. Sauté for 3 minutes on each side, stirring occasionally. Remove from heat and let them stand.
To prepare the salad, first whisk together Dijon mustard, olive oil, red wine vinegar, and salt to make the dressing. Set it aside. In a large bowl, place arugula, and then add farro, prosciutto, goat cheese, dried cranberries, and the cooled pears on top. Drizzle the dressing over the salad and toss everything together to coat.
