Coming at you with another What I Ate Wednesday Post since I received amazing feedback last week that you all love these kinds of posts so much! I agree, I really like them too and am super nosy, so its awesome to see into what people are eating.
Plus, my job is kinda all over the place and I’m doing different things every day, including making tons of recipes so I feel like its fun to see what I’ve got up my sleeve.
This week’s post was really heavy on the idea behind eating all of what I have on hand or what I’m making for the blog. I was pretty busy in the kitchen this week, retesting some old recipes and then creating a few new ones, so take this as your little sneak peak of what’s to come!
My day started early with a Flywheel class, which is pretty typical for me to attend once or twice a week.
As I stated in last week’s What I Ate Wednesday, I’m the type of person who wakes up and literally sprints out of bed, hops in my car, and heads to class. Half the time, I don’t even brush my teeth until after I’m home. Whoops!
I never really found that I needed any form of nourishment right before an early morning class, but if I wait longer than like 8:30 to do a workout then I definitely will need something to power me through.
After class is a different story because I’m normally hungry within the first half hour after working out, and yesterday I was particularly hungry right after class. I needed to run into Trader Joe’s and I know they have Perfect Bars for fairly cheap, so I snagged their hazlenut chocolate (which actually tastes like a Forrer Roche…SO GOOD.)
I ate half while I walked the store, knowing I really just needed something to hold me over until I got home. Paying for a half eaten Perfect Bar was an interesting thing to do… the clerk looked at me like I was crazy, ha!
I picked up some ingredients to make my vegan chocolate frosting for a cake I need to make, along with some tempeh (theirs is the besssttttttt!!!) and some other ingredients for upcoming recipes.
When I got home, I hopped in the shower and quickly made my favorite toast combo right now.
Sauteed cinnamon apples on peanut butter toast. It’s quick and easy for me, and if you want to know how I make the apples, I share it on my Instagram story highlights under the recipes highlight!!
I finish both pretty quickly, make an unpictured cup of coffee with peppermint mocha creamer and got to town making recipes in the kitchen.
I started my blog a year and a half ago and things have definitely changed in terms of what kind of photography I’m doing and pictures I’m taking, and I sure as heck learned a lot, but with that comes the obligation to retake some of the photos so they aren’t quite as outdated. I’ve slowly but surely started to go back to my old posts and make some edits.
They will probably be outdated again by the time I get around to fixing them all. LOL!
I made brownies for an upcoming blog post, my healthy banana bread recipe, and one savory dish.
I got hungry around 11:30 and also just really needed to break into the banana bread so I grabbed a slice. Doing my best to remember to take photos of my food, I snagged this photo about halfway through.
Lunch came at around 1, after I was done shooting for the day. So with the leftovers from my meal, I made a BBQ chicken salad that literally hit the spot. I’m working on a homemade BBQ sauce recipe for you all soon, it’s literally so dang good I could drink it. I threw chicken with sauce over a bed of arugula with mozzarella, tomatoes, green onion + red onion (my breath smelled so good..), and some red beet kraut.
It was delicious. This would make the perfect prep ahead meal for lunches.
I pretty much worked through the rest of the afternoon, I’m really trying to get some stuff done on the back-end of my blog and it’s a lot harder to do than I ever expect. I’m so not good at technology.
Stomach starts to grumble at like four and I grab a brownie. I used to never be able to snack on anything sweet during the day because that would be ‘unhealthy’ and sweets were only meant for dessert. I’m so glad I’m over that stage in my life. I would probably just have carrots + hummus (which I LOVE!) but I didn’t want it, so it would just be like putting a band-aid on my cravings. Now I’m able to eat the single brownie and get back to my work.
There was a time where I would want the brownie but eat the carrots + hummus, then be left feeling unsatisfied so I would go back for more, then I would grab a protein ball, then an apple with nut butter, all because I really wanted the brownie but wanted to eat something ‘healthy’. It would spiral out of control until I ended up just eating the brownie anyway, plus a lot, lot more.
So now I try really hard to listen to what I actually want, some days its honestly carrots and hummus and some days its a brownie.
Today, it was a brownie.
Ellie (my golden retriever pup) was home today, so I take her out for a walk before heading home to wrap up some work and finish dinner.
I’m making BBQ salmon (lol, do you see a theme here?). I’m actually reheating it from last night, but I make some asparagus and have a small bowl of my mom’s white chicken chili on the side. Yeah lots of protein haha, but honestly I craved this soup for so long that I needed it!! This recipe is delicious and I’m thinking about recreating it for the blog. What do you think?
After dinner, I edit some blog photos while snacking on and apple, and then the same freezer fudge from last week. I’m still a little hungry so I grab another brownie because sometimes you need two brownies in one day.
Next week I’m going to try to do a day on-the-go for me, so you can see how I do meals when eating out and running around!3
