Hey hey hey!!! We are back for another week of What I Ate Wednesday, which will probably be the last of the year because somehow next week is already the day after Christmas?! I cannot believe it!
I feel like I’ve been running around like a chicken with it’s head cut off trying to get everything prepared for the holidays. Tom and I like to do holidays together, and his family lives in Connecticut so that means there is a lot of traveling if we want to see both families.
So I have to make sure I’m full prepared and all my gifts are wrapped before we head to CT on the 23rd, so that when we come back on Christmas I’m all ready. That also means I need to pack, organize everything and try not to forget a million things like I typically do.
I’ve also been doing a ton of holiday baking, as you’ll see kinda in this post.
My mom hired me to make her team my gingerbread truffles as little holiday gifts! I’m going to be making them today and wrapping them up in little bags for everyone. We thought that would be the most perfect little gift for the holidays!

I woke up and headed out the door for a spin class, which seems like a common theme on Tuesday mornings for me! I grabbed my water bottle and headed out the door.
Post spin class I’m normally pretty hangry..so I showered off and grabbed a Larabar to eat while I made my coffee and got settled in for the day. Quite honestly I forgot about Larabars because I really don’t eat too many bars anymore, maybe like one or two a month and with so many on the market, I always like to try a new one.
This peanut butter cookie one was just as good as I remembered and also made me remember how much I love them.
I worked for about an hour and a half until like 9:30 before my stomach started growling and it was time for a real breakfast. A plain Greek yogurt (with a splash of vanilla extract – it’s so good!), grapes, my homemade gingerbread granola, and almond butter.
A good mixture of protein, fat and carbs to keep me full and able to focus on my work.
I worked through the afternoon doing computer work because today wasn’t a baking or cooking day and I desperately needed to play catch-up on the blog. I broke around 1 to make lunch.
I shared in my Instagram stories the other day that I was loving this new to me Buffalo Bleu Hummus and my friends Dana recommended that I put it on an egg sandwich, so I really seriously couldn’t get that out of my mind.
A slice of rye toast with buffalo hummus and a fried egg on top. Paired it with the Daily Harvest cauliflower and leek soup (which was incredible).
I know I talked about Daily Harvest a few weeks ago but honestly, they rock. I’ve been loving having their smoothies, harvest bowls, and now soups in my freezer for easy and delicious lunches or snacks. I’ve even eaten them for dinner.
One of my friends recently had a surgery and she got a package delivered to her house to have while she recovered – I thought that was a great idea.

As the afternoon went on, I took a few phone calls and snacked on a pear and then two little pieces of my paleo peppermint brownies, which was a wise decision. I’m always looking for a little afternoon pick me up and this did the trick.
I ran out to a doctors appointment in the afternoon before coming home to make dinner. We had gotten one of those meal delivery services, Plated, and it was my first time ever trying one of these.
Taiwanese chicken lettuce wraps were on the agenda and they turned out delicious! They were studded with chopped dates for sweetness and lots of other really tasty flavors – I loved it. My only complaint was the amount of plastic that was in there…they seriously wrapped red pepper in plastic and I was just confused. Would love to see them do some sort of reusable container.
Dessert was a chopped honeycrisp apple + two of my gingerbread truffles. Make them. Trust me.
