What I Ate Wednesday
Hiiiiii friends!! I miss poppin’ in on here with something besides just a recipe post.
I’m going to try to do some more of these ‘What I Ate Wednesday’ posts more often, because I know people really enjoy seeing what people each eat day. I shared that I was going to be doing this on Instagram and so many of you said that you really love them too, so I figured it was a good idea.
With that being said, take this with a grain of salt. I’m sharing this strictly for ideas for meals, to show that eating healthy doesn’t have to be complicated, to help people learn of new foods or products that I’m using and loving. This isn’t meant for a comparison trap, I’ve become pretty good at listening to my hunger (with of course accidentally undereating and overeating sometimes as well) but more just meant to show my life.
I typically work from home Monday – Thursday and have pretty good access to a full kitchen, so I don’t actually do much meal prep and often rely on quick meals like Daily Harvest or leftovers from the night before.
Anyway, lets get to it.
Yesterday I woke up at like 6:45 and was immediately out the door for a run. I’m such a goober in the fact that I never do anything else except go to the bathroom and then head out the door to exercise because I also am easily distracted.
I went on a run yesterday so it was a sleep-in morning for me.. I’ve now considered 6:45 am as sleeping in.
Refueled with a vanilla Siggi’s yogurt, coconut granola, and a banana which I ate on the side. A cup of coffee with the peppermint mocha creamer on the side, too. I love a morning with a simple breakfast like this because it’s almost mindless but makes me happy cause I love sweet for breakfast.
I was feeling super inspired to make some gingerbread truffles yesterday, I think its the holiday season but also could be because I’m obsessed with the Great British Baking Show and they just made gingerbread on there. Anyone else watching this show? It’s so good.
After breakfast I started making the truffles and probably ate about 2 total while testing the dough. They turned out really good, and even better once I covered them in chocolate because what isn’t better covered in chocolate. Recipe for these guys coming soon!!
After a morning workout, my day is fairly inactive because I’m either in the kitchen or on my computer doing work, so I’m relying on coffee to keep me doing. I work for a couple hours before I realize that I probably should have had some sort of fat with my breakfast to keep me full.
It also was around 11:30 and with breakfast at around 8, my stomach was starting to let me know it was hungry. I wasn’t very creative but went back to one of my tried and true quick breakfasts or snacks.
Two slices of whole wheat toast with salted almond butter. Another cup of coffee for energy 🙂
Favorite almond butter is for sure the one from Trader Joe’s – either the (but I have to add salt cause they don’t sell a raw salted) or the regular salted creamy, its the best testing smoothest almond butter I’ve ever had! Anytime I go, I seriously stock up on it because I can’t imagine the day when I don’t have it.
The dog gets a walk and I get to work finishing a blog post on a cookie skillet that I made that probably won’t share until the new year because I’ve got a special project coming your way in January! Aka trying to get ahead as much as I can right now.
I grab two Emmys coconut mint cookies (my fave) while working.
Other afternoon snacks included a few handfuls of blueberries and two of my OG protein balls that I seriously always have in the fridge. I made them with chocolate protein powder this time and they were amaze.
The rest of the afternoon was spent working until about six when I normally try to shut it down for the day. I found that working for myself, this is really a hard thing to do unless I have plans but my eyes get really tired of staring at a screen of some sort all day so I force myself to do it.
We have leftover chicken thighs from the weekend, so I want to do something with them, but not sure what yet. Relying on proteins that I’ve made over the weekend or during the week seriously are a game changer when it comes to my meals. I don’t want to have to cook a new protein every single time I go to eat lunch or dinner, so even if I’m not doing a major meal prep each week, I enjoy having some proteins like ground turkey, some chicken breasts or thighs, tempeh, or tofu ready for a quick meal.
No one else is home tonight so I grab a Daily Harvest bowl that I’m going to throw the chicken thighs on top of. Daily Harvest is the bomb and make my life so much easier. Into a saucepan went the brussels sprouts and lime pad thai and within 5 minutes they were ready.
Threw on the leftover chicken thighs, which are like purple and blue because we had it with braised cabbage a few nights ago. Topped it all off with half an avocado and sriracha. SO GOOD.
My craving for something sweet happens pretty soon after dinner is over and lately I’ve been into having a sliced honeycrisp apple in addition to some form of one of my baked goods. I forgot to snag a picture of the apple, but it was almost the size of my face.
Tonight is a slice of my cinnamon roll tahini freezer fudge swirl that I’m going to share soon, along with a paleo chocolate chip cookie that I found in the back of my freezer…see the freezer theme here. I think that’s what happen you have a baking blog.
I may or may not have gone back for seconds on both. My sweet toooooooth cannot be stopped.
