– grainless granola – melted coconut oil – raw cashews – maple syrup – vanilla – fresh blueberries – chia seeds – maple syrup
In a food processor, blend 1 bag grainless granola with melted coconut oil. Blend until fully combined and crumbly.
Press mixture into brownie pan, create even layer, and freeze. Blend cheesecake ingredients until smooth, spread onto crust, freeze again.
For chia jam, heat fresh blueberries in saucepan over medium heat. Remove from heat, mash blueberries with fork, add chia seeds and maple syrup, mix and let sit for 15 mins to gel. Add blueberry layer onto cheesecake. Refrigerate for at least 1 hour before consuming.
