Canadian Bacon Egg Cups

To make breakfast egg muffins, preheat the oven to 350F and prepare a muffin tin by greasing it. In a saute pan, cook onions and peppers until soft, then add minced garlic. Set aside.

Whisk together eggs and egg whites with salt and pepper. Line each muffin cup with Canadian bacon slices, then pour in the egg mixture.

Add sauteed peppers and onions and sprinkle cheese on top. Bake for 30 minutes and allow to cool before serving.
