–Coconut oil – Chocolate chips (Hu Kitchen for paleo) – Eggs – Egg yolk – Coconut sugar – Vanilla extract – Almond flour
Preheat oven to 425°F and grease four 8oz ramekins, placing a parchment paper round in each. Melt chocolate chips and coconut oil in 30-second increments.
In a larger bowl, whisk the melted mixture with two eggs and one egg yolk, then add coconut sugar, vanilla, almond flour, and salt.
Divide the batter evenly into the ramekins and bake until the tops are jiggly, but not wet. Let rest for one minute.
Run a knife around the edges, invert onto a plate, and let rest for 30 seconds before removing the ramekin.
Top with powdered sugar, vanilla ice cream, and raspberries.
