– Chickpeas – Bell pepper – Cucumbers – Grape tomatoes – Red onion – Crumbled feta – Herbs
Wash and chop all veggies and herbs.
In a large bowl, combine chickpeas, peppers, cucumbers, tomatoes, red onion, and feta, and top with parsley and mint.
Whisk together olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper in a glass measuring cup.
