Cherry Almond Crisp

My almond cherry crisp recipe is out-of-this-world yummy, made with cherries, almond extract, and maple syrup for a natural sweetness. Plus, this crisp is both vegan and gluten-free, so everyone can have a piece!

Ingredients

Cherry base:

  • 7 heaping cups frozen cherries
  • 1/4 cup maple syrup
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • 1 tbsp arrowroot powder (or cornstarch) – this is optional but recommended. it will be more liquidy without!

Crisp:

  • 1.5 cups rolled oats
  • 1 cup finely chopped sliced almonds
  • 1.5 cups almond flour
  • 1/4 tsp salt
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil, melted
  • 1 tsp almond extract

Instructions

  1. Preheat oven to 350F.
  2. In a large bowl, mix together cherries, maple syrup, lemon juice, and vanilla. Then add arrowroot starch and toss. Pour cherries into dish (9×9 pan or 10.25 inch cast iron skillet).
  3. In another bowl, mix together oats, almonds, almond flour, and salt.
  4. Stir in maple syrup, coconut oil, and almond extract until well combined.
  5. Sprinkle cobbler topping on top of cherries until most of the cherries are covered.
  6. Bake in oven for 55-60 minutes or until topping is golden brown. Optionally, broil for a few minutes at the end for extra crisp.
  7. Let cool for 15 minutes before eating. Serve with vanilla ice cream. Store leftovers in refrigerator.
