Ingredients
Cherry base:
- 7 heaping cups frozen cherries
- 1/4 cup maple syrup
- 1 tbsp lemon juice
- 1 tsp vanilla
- 1 tbsp arrowroot powder (or cornstarch) – this is optional but recommended. it will be more liquidy without!
Crisp:
- 1.5 cups rolled oats
- 1 cup finely chopped sliced almonds
- 1.5 cups almond flour
- 1/4 tsp salt
- 1/2 cup maple syrup
- 1/2 cup coconut oil, melted
- 1 tsp almond extract
Instructions
- Preheat oven to 350F.
- In a large bowl, mix together cherries, maple syrup, lemon juice, and vanilla. Then add arrowroot starch and toss. Pour cherries into dish (9×9 pan or 10.25 inch cast iron skillet).
- In another bowl, mix together oats, almonds, almond flour, and salt.
- Stir in maple syrup, coconut oil, and almond extract until well combined.
- Sprinkle cobbler topping on top of cherries until most of the cherries are covered.
- Bake in oven for 55-60 minutes or until topping is golden brown. Optionally, broil for a few minutes at the end for extra crisp.
- Let cool for 15 minutes before eating. Serve with vanilla ice cream. Store leftovers in refrigerator.
