Apple Cinnamon French Toast Casserole

Sit back and relax while your home fills with the divine scents of cinnamon, baked apples, and brown sugar! My apple cinnamon French toast casserole is quick to prepare and perfect for the fall season. Topped with maple syrup and powdered sugar, this breakfast treat is nothing short of delectable.

Ingredients

  • 2 loaves sliced Brioche bread, diced into big cubes
  • 1 cup pecans, roughly chopped
  • 2 large apples, peeled & diced into small bite sized chunks
  • 10 eggs
  • 2 cups milk
  • 1 cup brown sugar (divided)
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 2 tsp vanilla
  • 1/4 tsp salt
  • 1 stick butter (1/2 cup)
  • powdered sugar + maple syrup for topping

Instructions

  1. Heat oven to 375F and grease 9×13 casserole dish.
  2. Add diced brioche to a large bowl, add chopped apples and pecans.
  3. In a separate bowl, whisk together eggs, milk, 1/2 cup brown sugar, cinnamon, nutmeg, vanilla, and salt.
  4. Pour egg mixture over bread mixture and toss until evenly coated, but do not over mix, as you don’t want it to become soggy.
  5. Pour mixture into greased casserole dish.
  6. In a small bowl, melt butter in microwave. Whisk in remainder of brown sugar once melted, and then pour this mixture over top of french toast mixture.
  7. Bake for 70-80 minutes or until brown and crispy on top.
  8. Let cool 10 minutes before serving.
