Asian Chicken Crunch Salad

Asian Chicken Crunch Salad is a nutritious and filling dish full of yummy citrus flavor and crunchy mix-ins. It’s loaded with ingredients like carrots, green onion, mandarin oranges, and peanuts!

Ingredients

Salad

  • 1 head romaine, chopped
  • 4 cups napa cabbage, chopped thin
  • 2 cups red cabbage, chopped thin
  • 2 cups shredded carrots
  • 1 red pepper, julienned
  • 4 cups cooked chicken breasts, shredded (about 3 small breasts)
  • 1/2 cup cilantro, chopped
  • 1/2 cup green onion, chopped
  • 2 10oz can Mandarin oranges, drained
  • 1 cup salted peanuts
  • 1 cup chow mein noodles
  • 1/4 cup sesame seeds
  • salt & pepper to taste

Dressing

  • 1/2 cup avocado oil (or other neutral oil)
  • 1/4 cup sesame oil
  • 1/4 cup rice wine vinegar
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tsp sriracha
  • 2 tsp minced ginger
  • 2 cloves garlic, minced

Instructions

  1. Start prepping the salad by adding lettuce and cabbages to a large bowl. Add on carrots, pepper, chicken, cilantro, and green onion and toss to mix together.
  2. Add on mandarin oranges, salted peanuts, chow mein noodles, and sesame seeds.
  3. In a glass measuring cup, whisk together all dressing ingredients until well combined. Pour over top of salad and toss gently using tongs until well coated and salad is mixed.
  4. Serve!
