Ingredients
Salad
- 1 head romaine, chopped
- 4 cups napa cabbage, chopped thin
- 2 cups red cabbage, chopped thin
- 2 cups shredded carrots
- 1 red pepper, julienned
- 4 cups cooked chicken breasts, shredded (about 3 small breasts)
- 1/2 cup cilantro, chopped
- 1/2 cup green onion, chopped
- 2 10oz can Mandarin oranges, drained
- 1 cup salted peanuts
- 1 cup chow mein noodles
- 1/4 cup sesame seeds
- salt & pepper to taste
Dressing
- 1/2 cup avocado oil (or other neutral oil)
- 1/4 cup sesame oil
- 1/4 cup rice wine vinegar
- 1/4 cup soy sauce
- 1/4 cup honey
- 1 tsp sriracha
- 2 tsp minced ginger
- 2 cloves garlic, minced
Instructions
- Start prepping the salad by adding lettuce and cabbages to a large bowl. Add on carrots, pepper, chicken, cilantro, and green onion and toss to mix together.
- Add on mandarin oranges, salted peanuts, chow mein noodles, and sesame seeds.
- In a glass measuring cup, whisk together all dressing ingredients until well combined. Pour over top of salad and toss gently using tongs until well coated and salad is mixed.
- Serve!
