Prep: 10Cook: 40Total: 50 minutes
Yield 3 bowls 1x

Ingredients

  • 2 tbsp olive oil
  • 1 small yellow onion, diced
  • 1lb ground beef
  • 10 oz romaine lettuce, chopped
  • 3 roma tomatoes, diced
  • 1 cup pickles, diced if desired
  • 1 cup shredded yellow cheddar cheese

Sweet Potatoes:

  • 2 sweet potatoes
  • 2 tbsp oil

Sauce:

  • 1/3 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp pickle juice
  • 1 tsp worcestershire sauce
  • 1/4 tsp smoked paprika
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder

Instructions

  1. Preheat oven to 425F and line with parchment paper. Cut sweet potatoes into small strips and toss with olive oil. Lay flat on baking sheet and bake for 40 minutes, tossing occasionally.
  2. Heat a pan over medium-high heat and add olive oil. Add in diced onion and cook for 2-3 minutes until just softening. Add in ground beef, break apart, and cook until no longer pink.
  3. In three large bowls, divide lettuce evenly, then add meat and onions evenly amongst the lettuce, repeating this process with the tomatoes, pickles, and cheese.
  4. In a small bowl, whisk together all sauce ingredients.
  5. Add sweet potatoes to each bowl. Then drizzle sauce evenly all over bowls. Enjoy!
