Buffalo Chicken Baked Ziti

Amp up the flavor with this incredible Buffalo Chicken Baked Ziti recipe. Made with ricotta, buffalo sauce, blue cheese, and lots of veggies, it’s sure to wow the entire family!

Ingredients

  • 1lb ziti noodles
  • 2 tbsp olive oil
  • 1/2 yellow onion, diced
  • 2 cups diced carrots
  • 2 cups diced celery
  • 4 cloves garlic, minced
  • 1lb ground chicken
  • 15oz ricotta cheese
  • 1 cup buffalo sauce (I used Frank’s wing sauce)
  • 1/2 cup blue cheese dressing
  • 2 cups shredded mozzarella cheese (divided)
  • sliced green onion for topping

Instructions

  1. Preheat oven to 425F.
  2. Cook ziti according to package directions, drain, and set aside.
  3. In a large sauce pan or dutch oven, heat olive oil over medium-high heat. Add in onions, carrots, and celery once hot and cook until just beginning to soften – about 5-6 minutes. Stir in garlic and cook another two minutes.
  4. Add in ground chicken and cook until no longer pink, breaking up with wooden spoon and stirring occasionally.
  5. Add in ricotta, buffalo sauce, and blue cheese dressing. Stir until all combined, then add in 1 cup of the mozzarella cheese. Stir.
  6. Pour into 9 x 13 casserole dish and top with remaining mozzarella. Bake for 20 minutes.
  7. Top with green onion and serve!
