Ingredients
- 3 large cooked chicken breasts
- 3 cups chopped romaine lettuce
- 2 cups croutons
- 1/2 cup shaved parmesan cheese
- 1 cup 5% plain greek yogurt
- 1/2 cup mayonnaise
- 1/4 cup grated parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 2 tbsp Worcestershire sauce
- 1 tbsp dijon mustard
- 3 tsp anchovy paste
- 2 tbsp avocado oil
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- To finely shred chicken, add to food processor and pulse for 10 seconds. Alternatively shred by hand.
- Add shredded chicken to a large bowl, and then add lettuce, croutons, and shaved parm.
- In a bowl, whisk together remainder of ingredient list to make the dressing. Pour over top of chicken mixture and toss until well combined.
- Serve on bread, with chips, in a wrap, or on a salad!
