Caesar Chicken Salad

Caesar Chicken Salad is putting a familiar flavored spin on the classic, refreshing dish! This easy, high-protein recipe is simple to prepare and comes together in under 10 minutes.

Ingredients

  • 3 large cooked chicken breasts
  • 3 cups chopped romaine lettuce
  • 2 cups croutons
  • 1/2 cup shaved parmesan cheese
  • 1 cup 5% plain greek yogurt
  • 1/2 cup mayonnaise
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp Worcestershire sauce
  • 1 tbsp dijon mustard
  • 3 tsp anchovy paste
  • 2 tbsp avocado oil
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. To finely shred chicken, add to food processor and pulse for 10 seconds. Alternatively shred by hand.
  2. Add shredded chicken to a large bowl, and then add lettuce, croutons, and shaved parm.
  3. In a bowl, whisk together remainder of ingredient list to make the dressing. Pour over top of chicken mixture and toss until well combined.
  4. Serve on bread, with chips, in a wrap, or on a salad!
