Ingredients
Dry ingredients
- 1 3/4 cup all purpose flour
- 1 1/3 cup white sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
Wet Ingredients
- 1 cup pumpkin puree
- 2 eggs
- 1/2 cup oil (any neutral oil will work)
- 1/3 cup water
- 1 tsp vanilla
- 12 oz chocolate chips
Instructions
- Preheat oven to 350F and line muffin tins with liners and non stick spray.
- In a medium sized bowl, whisk together all of the dry ingredients.
- In a large bowl, beat eggs with pumpkin, then beat in oil. Whisk in water and vanilla.
- Add dry ingredients slowly to wet ingredients until fully incorporated.
- Gently fold in chocolate chips, careful not to over mix. Add more chocolate chips on top if desired.
- Bake muffins for 19-22 minutes or until toothpick inserted in center comes out clean.
