Classic Pumpkin Chocolate Chip Muffins

‘Tis the season for all of the pumpkin treats! These Classic Pumpkin Chocolate Chip Muffins are easy to make and will ease you in to the fall festivities. Made with pumpkin puree, cinnamon, nutmeg, and of course, chocolate chips!

Ingredients

Dry ingredients

  • 1 3/4 cup all purpose flour
  • 1 1/3 cup white sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup pumpkin puree
  • 2 eggs
  • 1/2 cup oil (any neutral oil will work)
  • 1/3 cup water
  • 1 tsp vanilla
  • 12 oz chocolate chips

Instructions

  1. Preheat oven to 350F and line muffin tins with liners and non stick spray.
  2. In a medium sized bowl, whisk together all of the dry ingredients.
  3. In a large bowl, beat eggs with pumpkin, then beat in oil. Whisk in water and vanilla.
  4. Add dry ingredients slowly to wet ingredients until fully incorporated.
  5. Gently fold in chocolate chips, careful not to over mix. Add more chocolate chips on top if desired.
  6. Bake muffins for 19-22 minutes or until toothpick inserted in center comes out clean.
