Everything Bagel Breakfast Casserole

Yield 6 servings ~230g each. 1x


  • 1/2 yellow onion, diced
  • 6 slices turkey bacon, diced
  • 2 cloves garlic, minced
  • 4 eggs
  • 3 cups egg whites
  • 1/2 cup nonfat cottage cheese
  • 1/3 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 tbsp EBTB seasoning (divided)
  • 4 Everything Bagel Thins, torn into pieces


  1. Preheat oven to 350F and spray a 9×13 casserole dish with nonstick spray.
  2. In a saute pan, spray with nonstick spray. Heat to medium high heat. Once hot, add onions and turkey bacon. Cook for about 4-5 minutes or until browning.
  3. Add garlic to onions and bacon for an additional minute and then turn off heat.
  4. In a large bowl, whisk together eggs and egg whites. Whisk in cottage cheese and cheddar cheese.
  5. Mix in turkey bacon and onions, and then add salt, pepper, and 2 tbsp of EBTB seasoning.
  6. In casserole dish, add torn bagel thins. Pour egg mixture into the casserole dish and pat down all bagel pieces to ensure they are coated. Sprinkle with remaining tablespoon of EBTB seasoning.
  7. Bake for 40-45 minutes or until full cooked in middle. Let cool before serving.
