Garlic Parmesan Smashed Potatoes

  • 1 lb baby gold or red potatoes
  • 3 tbsp butter, softened
  • 4 cloves garlic, minced
  • 2 tbsp parsley, chopped fine
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup shredded parmesan cheese


  1. Fill a large pot halfway with water and a few pinches of salt, bring to boil.
  2. Once boiling, add potatoes and cook for 25-30 minutes or until fork tender.
  3. Drain potatoes and let cool slightly.
  4. While cooling, mix together softened butter, garlic, parsley, salt, and pepper.
  5. Turn oven on to broil (550F).
  6. Add potatoes to parchment lined baking sheet. Using the back of a glass, press down to ‘smash’
  7. Brush each potato with butter mixture. Broil in oven for 10 minutes, keeping an eye on them as you may have to move your tray around.
  8. Take out of oven and add parmesan cheese on top of potatoes. Broil for another 4-5 minutes.
  9. Enjoy!
