Healthy Cookie Skillet

Skip the regular cookies and whip up this Healthy Cookie Skillet — a giant treat made with almond flour, coconut sugar, and lots of chocolate chips!

  1. Preheat oven to 350F and grease 8-inch skillet with coconut oil or nonstick spray.
  2. In a large bowl, whisk together eggs and coconut sugar. Whisk in almond butter and vanilla.
  3. In a small bowl, stir together almond flour, baking soda, and salt.
  4. Add dry ingredients to wet ingredients and stir until all combined, batter will be thick.
  5. Stir in chocolate chips.
  6. Form batter into greased skillet, topping with more chocolate chips if desired.
  7. Bake for 25-30 minutes. The less time, the more gooey it will be. Let rest 10 minutes before serving.
  8. Flake with sea salt and serve!
