Healthy Monster Cookies

Healthy monster cookies are an easy gluten-free cookie recipe made with simple ingredients like oatmeal, peanut butter, and almond flour. Not only are they nutritious but they also are just like the classic monster cookie.

Ingredients

  • 2 cups almond flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup natural peanut butter
  • 1/3 cup coconut oil
  • 2 eggs
  • 1/3 cup coconut sugar
  • 1 tsp vanilla
  • M&Ms for mixing
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat oven to 350F and line baking sheet with parchment paper.
  2. In a large bowl, mix together all dry ingredients.
  3. In a small bowl, whisk two eggs and add oil and coconut sugar.
  4. Add in peanut butter and vanilla.
  5. Mix wet ingredients into dry ingredients and stir until fully combined.
  6. Add in M&Ms and chocolate chips and form into balls.
  7. Flatten slightly onto cookie sheet and top with more M&Ms and chocolate chips if desired.
  8. Bake for 14-16 minutes.
  9. Enjoy!
