Healthy Peanut Butter Snowballs

Ingredients

  • 1/2 cup natural salted peanut butter
  • 1/4 cup coconut flour OR 3/4 cup almond flour
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla
  • 1 cup white chocolate chips
  • 1 tsp coconut oil
  • Sprinkles

Instructions

  1. In a large bowl, mix together peanut butter, flour, maple syrup and vanilla until smooth.
  2. Roll into balls and place in freezer for at least 30 minutes.
  3. Meanwhile, melt white chocolate chips with coconut oil.
  4. When balls are done chilling, dip in white chocolate and add sprinkles.
  5. Store in fridge.
