Healthy Single Serve Cookie

Never look back! This Healthy Single Serve Cookie recipe is the perfect option for one. Made from simple ingredients like almond flour, coconut sugar, and chocolate chips!

Ingredients

  • 1/2 whisked egg (pour out half of egg and save for something else!)
  • 2 tbsp coconut sugar
  • 1 tbsp coconut oil
  • 1/4 tsp vanilla
  • 1/3 cup almond flour
  • 1/8 tsp baking soda
  • pinch of salt
  • 2 tbsp chocolate chips

Instructions

  1. Preheat oven to 350F and line small baking sheet with parchment paper.
  2. Whisk egg, and set half aside. You’ll only be using half an egg for this recipe.
  3. Whisk in coconut sugar, coconut oil, and vanilla.
  4. Pour almond flour on top of wet ingredients, along with baking soda and salt.
  5. Mix until well combined. Add in chocolate and mix again.
  6. Place in freezer for 20 minutes.
  7. Roll into cookie and press down to flatten slightly.
  8. Bake for 12-14 minutes or until golden.
