Healthy Sloppy Joes

Give sloppy joe night a remix with these Healthy Sloppy Joes! They’re made with all of the same classic ingredients like beef, seasonings, ketchup, and tomato sauce, but with lots of veggies added! It’s an easy-to-make meal that the entire family will love.

Ingredients

  • 2 tbsp olive oil
  • 1/2 yellow onion, diced
  • 1 cup carrots, finely diced
  • 1 cup celery, finely diced
  • 1 green pepper, finely diced
  • 3 cloves garlic, minced
  • 1lb ground beef
  • 1/2 tsp salt
  • 2 tsp chili powder
  • 1 tsp onion powder
  • 2 tbsp honey
  • 1 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 1 cup tomato sauce
  • 1/3 cup ketchup
  • 1/2 cup water or broth
  • cheddar cheese slices
  • buns or potatoes/rice to serve over

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Once hot add onions, carrots, celery, and pepper. Cook about 5-6 minutes until softened. Add in garlic and cook another minute.
  2. Add ground beef and break up, cooking until no longer pink. Add salt, chili powder, and onion powder. Stir until combined.
  3. Add in honey, worcestershire sauce, apple cider vinegar, tomato sauce, ketchup, and water, stirring until all combined. Let simmer over medium heat for 10-15 minutes or until thickened. If too thick, add more liquid.
  4. Add 2/3 cup meat to each bun and a slice of cheddar cheese on top. Enjoy!
