Ingredients

Nuggets

  • 1lb ground chicken
  • 1/4 cup grated parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • nonstick cooking spray (I prefer avocado oil spray)

Breading

  • 2 eggs
  • 1 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Preheat oven to 400F and line baking sheet with parchment paper. Alternatively preheat air fryer to 400F and spray basket with nonstick spray.
  2. In a large bowl, mix together all nugget ingredients until well combined. Form into nugget shape, forming about 16 nuggets. Freeze for at least 10 minutes to set up.
  3. While freezing, whisk two eggs in a bowl. In another bowl, mix together breadcrumbs, parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. After ten minutes, coat each nugget on both sides in the each wash, then immediately in the breadcrumb mixture. Press into mixture until evenly coated. Place on baking sheet (or in air fryer if air frying)
  5. Spray nuggets with nonstick baking spray. Bake for 8 minutes, flip + spray, and bake for another 8 minutes or until golden. If air frying, fry for 6 minutes, flip + spray, and fry for another 6 minutes or until golden.
  6. Serve with ketchup, bbq sauce, buffalo sauce or toss to coat!
