Maple Pecan Oatmeal Cookies

Ingredients

  • 1 cup all purpose flour
  • 1 cup rolled oats
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup butter, softened
  • 1/3 cup coconut sugar
  • 1/3 cup maple syrup
  • 1 egg
  • 1 tsp vanilla
  • 1 cup pecans, chopped

Icing:

  • 1/2 cup powdered sugar
  • 1 tsp cinnamon
  • 1 tbsp maple syrup
  • 1 tsp water

Instructions

  1. Preheat oven to 350F and line baking sheet with parchment paper.
  2. In a small bowl, mix together flour, oats, baking soda, salt, and cinnamon.
  3. In a large bowl, whisk together butter, coconut sugar, and maple syrup. Add in egg and vanilla.
  4. Add dry ingredients to wet ingredients slowly in two batches. Once all mixed together, add in pecans.
  5. Refrigerate dough for 30 minutes.
  6. Using a cookie scoop, make into 15 cookies. Press dough down slightly on top.
  7. Bake for 14-16 minutes or until golden brown.
  8. While cooking, make icing by whisking together all ingredients.
  9. Add a little icing to each cookie once they are cooled, alternatively, dip them in the icing.
