Ingredients
- 1 cup all purpose flour
- 1 cup rolled oats
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/2 cup butter, softened
- 1/3 cup coconut sugar
- 1/3 cup maple syrup
- 1 egg
- 1 tsp vanilla
- 1 cup pecans, chopped
Icing:
- 1/2 cup powdered sugar
- 1 tsp cinnamon
- 1 tbsp maple syrup
- 1 tsp water
Instructions
- Preheat oven to 350F and line baking sheet with parchment paper.
- In a small bowl, mix together flour, oats, baking soda, salt, and cinnamon.
- In a large bowl, whisk together butter, coconut sugar, and maple syrup. Add in egg and vanilla.
- Add dry ingredients to wet ingredients slowly in two batches. Once all mixed together, add in pecans.
- Refrigerate dough for 30 minutes.
- Using a cookie scoop, make into 15 cookies. Press dough down slightly on top.
- Bake for 14-16 minutes or until golden brown.
- While cooking, make icing by whisking together all ingredients.
- Add a little icing to each cookie once they are cooled, alternatively, dip them in the icing.
