Orange Poppyseed Bread

Glazed orange poppyseed cake is a bright and citrusy sweet bread with sprinkles of earthy poppyseed. Make a few extra loaves to share!

Ingredients

  • 1.5 cups white whole wheat flour
  • 1/4 cup poppy seeds
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 eggs
  • 1/2 cup coconut oil melted
  • 1/2 cup maple syrup
  • 1/2 cup plain greek yogurt
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 1/3 cup fresh orange juice
  • zest of 1 orange

Glaze:

  • 1/2 cup powdered sugar
  • 1 tbsp greek yogurt
  • 1 tbsp orange juice

Instructions

  1. Preheat oven to 350F and line 8×4 bread pan with parchment paper and nonstick spray.
  2. In a medium bowl, combine flour, poppy seeds, baking powder, and salt.
  3. In a large bowl, whisk together eggs, oil, maple syrup, greek yogurt, vanilla, almond extract, fresh orange juice, and orange zest.
  4. Slowly add the dry ingredients to the wet, stirring to combine. Once combined, pour into greased dish.
  5. Bake for 40-45 minutes or until toothpick inserted in center comes out clean. Let cool.
  6. While cooling, make glaze and then pour on top of cooled loaf.
  7. Enjoy!
