Pancake Oatmeal Bake

My sheet pan pancakes are filled with protein to fuel your daily adventures! Baking makes this recipe extra convenient – just mix your batter and pop it in the oven. You’ll be chowing down on baked pancakes in no time (don’t forget the maple syrup!).

Ingredients

  • 1 3/4 cups pancake mix (I like Kodiak cakes)
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup melted coconut oil (sub neutral oil)
  • 1/2 cup maple syrup
  • 1/2 cup peanut butter
  • 1/2 cup almond milk
  • 1 tsp vanilla
  • 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 350F and grease 9×9 baking dish.
  2. In a medium sized bowl, mix together pancake mix, oats, baking soda, cinnamon and salt.
  3. In a large bowl, whisk together eggs, coconut oil, maple syrup, and peanut butter. Add in almond milk and vanilla.
  4. Add dry ingredients into wet ingredients in increments, and whisk until well combined.
  5. Stir in chocolate chips.
  6. Pour into greased baking dish. Bake for 30-32 minutes or until toothpick inserted comes out clean. let cool completely before cutting into squares.
  7. Eat like you would pancakes. Serve with maple syrup, berries, and peanut butter! Enjoy.
