Peanut Butter Energy Bars

Ingredients

  • 2 cups rolled oats
  • 10 pitted medjool dates
  • 1 cup natural peanut butter
  • 1/2 cup honey
  • 1/4 cup chia seeds
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 1 tsp coconut oil
  • flakey sea salt

Instructions

  1. In a food processor, blend oats until fine.
  2. Add in medjool dates. If dates are hard, soak in hot water for 5 minutes. Blend until combined.
  3. Add in peanut butter, honey, chia seeds, vanilla, and salt. Blend until well combined and ball forms.
  4. Press dough into 8×8 pan lined with parchment paper.
  5. In a small bowl, melt chocolate chips and coconut oil in 30 second increments in microwave until smooth. Pour over top of dough. Sprinkle with flakey salt.
  6. Let freeze at least 30 minutes or fridge for 2 hours before cutting into pieces. Store in freezer or fridge.
