  • 3lb mini potatoes, sliced in half
  • 1 stick butter (1/2 cup), melted
  • 3 cloves garlic, minced
  • 1.5 cups grated parmesan (divided)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder


  1. Preheat oven to 425 and grease 9×13 glass casserole dish. Spread evenly 1 cup of grated parmesan cheese into bottom of casserole dish.
  2. Add potato halves to a large bowl. To bowl, add melted butter, minced garlic, other half cup parmesan cheese, salt, pepper, oregano, paprika, and onion powder. Stir until well combined.
  3. Pour into casserole dish. Bake for 30 minutes, then toss, and bake for another 20 minutes or until golden brown.
