Ingredients
- 2 tbsp avocado oil
- 1/2 large yellow onion, diced
- 1 green pepper, diced
- 5 cups chopped sweet potatoes
- 3 cloves garlic
- 1 lb turkey sausage
- 10 eggs
- 1/2 cup milk (nut milk works too)
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat oven to 350F.
- Prepare your veggies by chopping them all up and grease a 9×13 casserole dish.
- In a dutch oven or large saucepan, add avocado oil.
- Once hot, add onion, green pepper, and sweet potato and cook for 8-9 minutes or until softening.
- Throw in garlic for the last minute or two and saute. Take out veggies and lay into bottom of 9×13 pan.
- Add turkey sausage to same dutch oven and saute until fully cooked through. Add to veggies and stir to mix.
- In a separate bowl, whisk the eggs, milk, thyme, salt, pepper, and cheese.
- Pour egg mixture over veggie and sausage mixture. Stir until evenly dispersed.
- Bake for 40-45 minutes, or until center is firm. If it starts to brown halfway through, cover with foil.
- Let cool 15 minutes before serving.
