Preheat oven to 375F and line a baking sheet with parchment paper. Mix all meatball ingredients in a large bowl, then shape into 12-13 meatballs and place them on the baking sheet.

Bake for 15 minutes. While baking, whisk together sauce ingredients and set aside. Prepare cauliflower rice according to package, then add lime juice and salt. Divide caulirice into three bowls and add cucumber, edamame, and carrots to each.

Once meatballs are done, remove excess fat and place 4 meatballs on each bowl. Divide sauce evenly among the bowls. Enjoy!
